Yummy Gluten-free Dairy-free pancakes

I could not resist posting this from dinner tonight. We have been using box mixes for gluten free pancakes for a while now, but these made from scratch are the absolute best! I figure if I post the recipe here I will always be able to find it :)

1/2 cup *well rounded* tapioca flour ( inbetween 1/2 and 3/4 cup)
1/2 cup *well rounded* corn starch
1/4 cup garfava bean flour
1/8 cup sorghum flour

1/2 tsp xantham gum
1/4 cup powdered soy milk formula mix (replaces powdered milk)
1 tsp egg replacer
1 TB baking powder
1/2 tsp salt
a smidge less than 1/4 cut brown sugar
1/4 cup butter flavor crisco (or other shortening)
2 eggs
1 1/4 cup water (more or less depending on preference for thickness of batter)

beat all ingredients together and cook on a hot skillet

The trails and tribulations of a 4-year old

For 2 weeks now Aiden has been saying very sexist comments that everyone including his uncles and grandparents have been trying to stop. I guess we need to work harder...

Lining up at school:
Aiden: (talking to the little girl next to him). Wanna see my Rock N Roll dance?
Girl: Sure
Aiden: (Does a very crazy interpretation of Elvis) Girls can't do Rock N Roll dances.
Mommy: Aiden! That's enough. Girls can no anything they want to. You say your sorry.
Aiden: Sorry.
Aiden: Can you Rock N Roll dance?
Girl: No.
Aiden: See mommy, girls can't Rock N Roll Dance.


Aiden: Mommy, will I die?
Mommy: Yes.
Aiden: Will you die?
Mommy: Yes.
Aiden: Will you die before me?
Mommy: Most likely, but not for a very long time.
Aiden: Who will take care of me if you die?
Mommy: Hopefully you will be a grown-up and can take care of yourself.
Aiden: But who will take care of Eli. He will be very troublesome.
